New Chef Hired at Fiesta de Reyes

Old Town Hospitality Corp. has hired Rolfy Chavez as the new executive chef of Fiesta de Reyes and its three restaurants: Barra Barra Saloon, Casa de Reyes and the soon to open Cosmopolitan Hotel.

“Our guests should on the lookout for many new things at Fiesta de Reyes,” said Chavez. “There will be some menu additions to both Barra Barra and Casa de Reyes. I am planning on having more vegetarian options available for our guests and adding more happy hour and breakfast items such as crab omelets and benedicts with coriander hollandaise sauce and habanero and mole wings.”

Chavez spent the last two years with Ardent Hotels, implementing its Castle Ranch Steakhouse concept in several states.  At Ardent’s Holiday Inn Mission Valley, he fed the San Diego Chargers in training camp for two seasons and received great recognition by the team for outstanding food and service.  At the Castle Ranch Steakhouse in Craig, Colorado, he was recognized as one of the most influential chefs of the region by Craig Daily Press.

“Rolfy brings passion, a love of food, and a strong dedication to the success of Fiesta de Reyes in Old Town,” said Fiesta de Reyes owner Chuck Ross.  “An innovative, quality-oriented, and positive outlook toward food is a key factor to his success.”

For ten years prior, he worked as the executive chef for the Four Point Sheraton Hotel San Diego, where the restaurant was named “Rolfy’s Bistro.” There several cuisines were served from American and Mediterranean to French and Italian. In addition to the restaurant, he was responsible for banquet production, front and back of the house execution.

Chavez was previously the owner of a successful restaurant in Chula Vista and catering business. He began his training as a Sous Chef at the Sheraton Marina in San Diego where he later became Chef of the Cuisine.
